Ingredients

  • 1 cup (115 g) all-purpose flour
  • 3/4 cup (90 g) rolled oats
  • 1/2 cup (70 g) brown sugar
  • 1 teaspoon (3 g)ground cinnamon
  • 1/2 cup (113 g) butter
  • 2 large apples peeled, chopped
  • 1/2 cup (50 g) caster sugar
  • 2 tablespoons (15 g) cornstarch
  • 1 cup water
  • 1/2 tsp vanilla bean seeds (or vanilla extract)
  • vanilla ice cream for serving

Instructions

  • Preheat oven to 356°F (180°C).
  • Combine all-purpose flour, rolled oats, brown sugar, and ground cinnamon in a large mixing bowl. Whisk the ingredients together. Add butter and rub it into the mixture.
  • Transfer half of the flour mixture to a 2 1/2 qt. rectangular baking dish, distributing it evenly, and cover it with chopped apples.
  • Split the vanilla bean by using a sharp knife and remove the seeds from the inside. Add caster sugar, cornstarch, water, and vanilla bean seeds (or vanilla extract)in a saucepan. Bring the mixture to a boil while consistently stirring until it thickens and becomes clear. Remove it from the heat, and pour directly over the apple. Then, cover it with the remaining flour mixture.
  • Bake for 60 minutes until the apples are tender and the top is slightly browned. Cool off the apple crisp slightly, and serve it warm with ice cream on top if desired.

Notes

Tips:
  1. Choose crisp and slightly tart apples, such as Granny Smith or Honeycrisp. These varieties hold up well during baking and provide a good balance of sweetness and tartness.
  2. To prevent chopped apples from browning before assembling the crisp, you can toss them with a little lemon juice.
  3. Apple crisp is commonly served warm and pairs well with vanilla ice cream, whipped cream, or a dollop of Greek yogurt.
